1Preheat oven to 400F.
2Wash and peel sweet potatoes.
3Slice sweet potatoes into 1/4" medallions and place all ingredients in a bowl and mix well.
4Place medallions evenly on a baking sheet.
5Bake for 40-45 minutes.
6Once cooked and tender, puree in blender/food chopper until smooth.
NOTE: Cayenne pepper can be hot, so adjust according to your taste.
